
Chicken & Spring Onion Patties with Green Rice & Sesame Dressing

Ingredients
Rice
- 1 broccoli, roughly chopped into small florets
- 300g brown rice
- 75g baby spinach
Patties
- 1 spring onion, thinly sliced
- 1 courgette, grated
- 600g chicken mince
- 1 pack Japanese spices
- 1 Tbsp soy sauce
To Serve
- 150g sesame sauce

Bring a large pot of salted water to the boil. Prep & cook rice. Prep broccoli. Cook rice in pot of salted water for about 25 minutes, until tender. Add broccoli to pot for final 3 minutes of cook time. Drain, return to pot and keep warm.

Prep patties. Prep spring onion and courgette. In a large bowl, combine spring onion, courgette, chicken, Japanese spices, soy sauce and 1/2 tsp salt. Use a 1/4 cup measure to shape mixture into 1cm thick patties.

Cook patties. Heat a drizzle of oil in a large fry-pan on medium heat. Cook patties for about 3 minutes each side, until cooked through. Cook in batches if needed.

To finish. Fold spinach through cooked broccoli and rice and season to taste with salt and pepper.

Serve rice topped with patties and sesame sauce.
