
Burger Burger Indian Bhaji Burger with Raita & Garlic Broccoli

Ingredients
Onion Bhajis
- 1 brown onion, thinly sliced
- 2 carrots, grated
- 158g bhaji flour
- 1 cup water
Broccoli
- 1 broccoli, cut into small florets
- 2 cloves garlic, thinly sliced
- 25g sliced almonds
Burgers
- 200g haloumi, sliced 1cm
- 4 burger buns, cut in half
- 1 Lebanese cucumber, thinly sliced into rounds
- 4 Tbsp Bombay tomato chutney
- 4 Tbsp raita
- 1/2 bunch coriander, leaves picked

Preheat oven to 220°C. Prep onion bhajis. Prep onion and carrots. Whisk bhaji flour and water measure together in a bowl with 1 tsp salt. Add onion and carrots and stir to combine. Set aside.

Prep broccoli & burgers. Prep broccoli, garlic, haloumi, buns and cucumber and set aside separately.

Cook broccoli. Toss broccoli and garlic together on a lined oven tray with a drizzle of oil. Season with salt and pepper, add a knob of butter to tray and roast for 10 minutes on upper oven rack, until just golden and tender. Add almonds to tray and return to oven for a further 3-5 minutes, until almonds are golden.

Cook onion bhajis. Heat a drizzle of oil in a large fry-pan on medium heat. Using a 1/2 cup measure, spoon batter into pan and cook bhajis, in batches, for 3-4 minutes each side, until golden and cooked through. Season to taste with salt and pepper. Reserve pan.

Cook haloumi & heat buns. Heat a drizzle of oil in reserved fry-pan on high heat. Cook haloumi for about 2 minutes each side, until golden. Place buns on an oven tray, cut side down, and heat on rack below broccoli for about 5 minutes, until lightly toasted.

Serve buns filled with Bombay tomato chutney, onion bhaji, haloumi, cucumber, coriander and raita. Serve broccoli on the side.
