
BBQ Beef Brisket Pizza with Ranch Swirl

Ingredients
Pizza
- 300g BBQ beef brisket
- 140g BBQ sauce
- 1/2 red onion, thinly sliced
- 1 capsicum, thinly sliced
- 4 sprouted seed pizza bases
- 1 1/2 cups grated cheese
- 4 Tbsp ranch dressing
Salad
- 1/2 cos lettuce, roughly chopped
- 1/2 telegraph cucumber, thinly sliced into rounds
- 1 apple, thinly sliced
- 2 Tbsp ranch dressing

Preheat oven to 220°C. Preheat two oven trays. Prep beef. Remove beef from pack and place on a board. Pour sauce into a bowl. Thinly slice beef and add to sauce along with BBQ sauce. Mix together with a fork, breaking beef up as you go. Season with salt and pepper.

Prep pizzas. Prep onion and capsicum. Drizzle each pizza base with a little olive oil and sprinkle with a little cheese. Evenly divide beef and sauce over each base. Top with onion, capsicum and remaining cheese.

Cook pizzas. Place 2 pizzas on each tray and cook for 12-14 minutes, until the bases are crisp and golden around the edges. Swap trays halfway to ensure even cooking. If 2 pizzas don’t fit on each tray, cook in batches and eat the first 2 while you wait for the next batch!

Prep salad. Prep lettuce, cucumber and apple. Toss in a bowl with second measure of ranch dressing.

To finish. When pizzas are cooked, cut into slices and drizzle with first measure of ranch dressing.

Serve pizza with salad on the side.
