
Japanese Beef Sirloin Steaks with Slaw & Miso

Ingredients
Kumara
- 200g kumara, diced
- 1/4 tsp sesame nori salt
- 1 drizzle of oil
Broccoli Slaw
- 1/4 broccoli, roughly chopped
- 75g slaw
- 1 tsp sesame oil
- 1/2 tsp vinegar
- 1 tsp soy sauce
Beef
- 150g beef sirloin steak
- 1/2 tsp sesame nori salt
- 1/2 tsp soy sauce
- 1 drizzle of oil
To Serve
- 1 Tbsp miso aioli
- 1 pinch sesame nori salt

Before you start. Preheat oven to 220°C. Bring a full kettle to the boil.

Prep & cook kumara. Prep kumara and toss on a lined oven tray with first measure of sesame nori salt and oil. Cook for about 25 minutes, until tender and golden.

Prep & cook broccoli. Prep broccoli and place in a heat-proof bowl with a pinch of salt. Cover with boiling water, cover and leave to cook for about 5 minutes, until tender. Drain and refresh under cold water, then drain well.

Prep slaw. Add slaw ingredients to bowl with cooked broccoli and toss to combine. Season to taste with salt and pepper.

Prep & cook beef. Pat beef dry and toss with second measure of sesame nori salt and soy sauce. Heat oil in a fry-pan on high heat. Cook beef for 3-4 minutes each side, for medium (depending on thickness), or until cooked to your liking. Set aside to rest, covered. Thinly slice.

Serve. Kumara, beef and broccoli slaw with miso aioli and sesame nori salt.
