Pulled Chicken Mole with Broccolini & Micro Coriander

Ingredients
Rice
- 250g broccolini, finely chopped
- 150g brown rice
Mole
- 1 drizzle of oil
- 1 brown onion, finely chopped
- 300g free range chicken thighs
- 1 pack mole spices
- 2 tsp tomato paste
- 300g chicken broth
- 1/2 cup water
- 1 pack dark chocolate callets
To Serve
- 1 pack micro coriander, snipped
- 1 lime, cut into wedges
- 30g spicy pepitas
Steps

Before you start. Bring a pot of salted water to the boil.

Prep & cook broccolini & rice. Prep broccolini. Cook rice in pot of boiling water for about 20 minutes, until tender. Add broccolini for final 2 minutes of cook time. Drain and return to pot to keep warm.

Prep & cook mole. Prep onion and set aside. Pat chicken dry and season with salt and pepper. Heat oil in a deep fry-pan on high heat. Add chicken to pan and cook for 1-2 minutes each side, until golden but not cooked through. Remove from pan and reduce heat to medium.

Add onion to pan and cook for about 2 minutes, until soft. Add mole spices and tomato paste and cook for about 30 seconds, until fragrant. Add chicken broth, water measure, 1/2 tsp salt and return chicken to pan. Bring to a simmer and cook on low-medium for about 10 minutes, turning chicken halfway through cook time, until chicken is cooked through.

Finish mole. Turn off heat and remove chicken from pan. Stir chocolate through mole in pan, until melted and combined. Season to taste with salt and pepper. Use two forks to pull chicken and stir back through mole.

Prep garnishes. Use kitchen scissors to cut micro coriander, leaving about 1cm behind at the base. Cut lime into wedges.

Serve. Rice topped with mole, coriander and pepitas. Serve lime wedges on the side.
