
Fish Paella with Saffron & Yoghurt

Ingredients
Paella
- 1/2 tsp oil
- 1/2 brown onion, finely diced
- 1/2 broccoli, finely chopped
- 1 pack paella spices
- 1/2 pack saffron powder
- 3 Tbsp water
- 125g brown rice & quinoa
- 1/2 cup frozen peas
- 50g baby spinach, roughly chopped
Fish
- 1/2 tsp oil
- 1 cloves garlic, minced
- 300g market fish, diced 3cm
To Serve
- 1/2 lemon, cut into wedges
- 1/4 cup yoghurt
- 1/4 tsp chilli flakes (optional)

Prep & cook paella. Prep onion, broccoli and spinach. Heat oil in a fry-pan on medium-high heat. Add onion and cook for about 2 minutes, until soft. Add broccoli, paella spices and saffron and cook for about 1 minute, until fragrant.

Add water measure, rice, peas and a pinch of salt and stir-fry for 2-3 minutes, until hot through. Stir through spinach to wilt and leave on heat without stirring for about 2 minutes, until rice crisps on bottom of pan. Remove from heat and cover to keep warm.

Prep & cook fish. Prep garlic. Pat fish dry and dice 3cm. Heat oil in a fry-pan on high heat. Add garlic, fish and a pinch of salt and stir-fry for about 4 minutes, until fish is just cooked through.

Prep lemon.

Serve. Paella topped with yoghurt, fish, chilli flakes and lemon.
