Ingredients
Slaw
- 1/4 broccoli, finely chopped
- 1/4 Lebanese cucumber, cut in half lengthways & thinly sliced
- 1/4 cup edamame beans
- 1/2 pack slaw
- 1 Tbsp miso dressing
Beef
- 190g beef sirloin steak, fat trimmed
- 1/2 tsp sesame seed salt
- 1/4 tsp oil
To Serve
- 2 tsp miso drizzle
- 1/2 bunch coriander, leaves picked
Steps
-
Before you start. Bring a pot of salted water to the boil.
-
Prep & cook greens. Prep broccoli and cucumber. Cook broccoli and edamame in pot of boiling water for 3-4 minutes, until bright green and tender. Drain, rinse under cold water and leave to drain well.
-
Prep & cook beef. Pat beef dry and trim any excess fat. Coat beef with sesame salt. Heat oil in a frypan on medium-high heat. Cook for 4-5 minutes each side for medium (depending on thickness), or until cooked to your liking. Rest, covered before slicing thinly against the grain, reserving any resting juices.
-
Finish slaw. In a medium bowl, combine broccoli, edamame and remaining slaw ingredients. Season to taste with salt and pepper.
-
Serve. Slaw topped with beef, miso drizzle and coriander.
