Chickpea & Cauliflower Tagine with Pomegranate, Feta & Almonds

Ingredients
Bulgur
- 1/2 tsp oil
- 1/4 tsp salt
- 75g bulgur wheat
- 1/2 cup water
- 1/2 broccoli, finely chopped
Tagine
- 1/2 red onion, sliced
- 1/2 piece cauliflower, cut into small florets
- 1/2 can chickpeas, drained & rinsed
- 75g baby spinach, thinly sliced
- 1 tsp oil
- 1 pack tagine spices
- 1/2 tsp salt
- 1 can tomatoes
- 1/2 tsp soy sauce
- 1/2 tsp honey
To Serve
- 50g feta cheese, crumbled
- 1 bunch mint, leaves picked
- 1/2 pack sliced almonds
- 1 pack pomegranate arils
Steps

Before you start. Bring a full kettle to the boil.

Cook bulgur. Heat oil in a pot on medium-high heat. Add salt, bulgur and water measure and bring to the boil. Reduce heat to low, cover and cook for 10 minutes. After 10 minutes remove from heat and leave to steam for 10 minutes. Fluff up with a fork.

Meanwhile, prep & cook broccoli. Prep broccoli and add to a heat-proof bowl. Cover with boiling water and leave to cook for 6 minutes, until bright green and tender. Fold broccoli through cooked bulgur.

Prep tagine. Prep onion, cauliflower, chickpeas and baby spinach.

Cook tagine. Heat oil in a large pot on medium-high heat. Add onion and cauliflower, cover with a lid and cook for about 5 minutes, until starting to soften.

Add tagine spices and cook for about 1 minute, until fragrant. Add salt, canned tomatoes, honey and soy sauce and bring to a simmer. Simmer on medium heat, covered, for about 5 minutes, until vegetables are tender.

To finish. Stir chickpeas and baby spinach through tagine and cook for 1 minute. Season to taste with salt and pepper. Prep feta and mint.

Serve. Bulgur topped with tagine, feta, pomegranate, almonds and mint.
