Mediterranean Pizza with Tomatoes, Parmesan and Rocket

Pizza topped classic Mediterranean flavours; olives, artichokes and cherry tomatoes


Ingredients

MEDITERRANEAN PIZZA

  • 1 pizza base
  • 1/2 can pizza sauce
  • 70g parmesan cheese, finely grated
  • 1 shallot, thinly sliced
  • 1 capsicum, core and seeds remove and diced 1cm
  • 1/2 punnet cherry tomatoes, cut in half
  • 30g pitted olives, cut in half
  • 70g artichokes, roughly chopped

SALAD

  • 1/2 bag rocket leaves
  • 1/2 punnet cherry tomatoes, cut in half
  • 1 pear, core removed and thinly sliced

Steps

  1. oven to 220°C. Preheat an oven tray or pizza stone.
  2. Place a sheet of baking paper on bench (large enough to fit on oven tray or pizza stone). Place pizza base on baking paper. Evenly spread pizza base with pizza sauce and sprinkle over cheese. Evenly arrange all remaining Mediterranean pizza ingredients over base.
  3. Carefully lift baking paper with pizza base onto preheated tray/pizza stone. Cook until pizza is crisp and golden around edges, 8–10 minutes.
  4. While pizza is cooking, prepare salad. Reserve a handful of rocket to garnish and place remaining into a medium bowl with cherry tomatoes and pear. Toss with a drizzle of extra-virgin olive oil and season with salt and pepper.
  5. Slice pizza into 6–8 pieces and garnish with a handful of rocket. Serve salad on the side.
