Vietnamese turkey lettuce rolls with sweet chilli dipping sauce
Ingredients
VIETNAMESE TURKEY MINCE
- 1/4 stalk lemongrass, tough outer layer removed, very finely chopped
- 1 tablespoon finely grated ginger
- 1 clove garlic, minced
- 1/4 red chilli, finely chopped (optional)
- 150g turkey mince
- 1 spring onion, thinly sliced
- 1/2 tablespoon fish sauce
- 1 teaspoon soy sauce
- 1 teaspoon lemon juice
- 1/2 teaspoon brown sugar or runny honey
VEGETABLES
- 1/4 yellow capsicum, core and seeds removed and thinly sliced
- 1 carrot, peeled and grated or cut into thin matchsticks
- 1 handful mung bean sprouts
- 1 spring onion, thinly sliced
DIPPING SAUCE
- 1 tablespoon fish sauce
- 1 tablespoon sweet chilli sauce
- 1 tablespoon lemon juice
- 1/2 teaspoon soy sauce
TO SERVE
- 100g mung bean vermicelli
- 3-4 baby cos lettuce leaves
- 1 tablespoon chopped mixed coriander and mint

a half full kettle to the boil.

Heat a drizzle of oil in a small fry-pan on medium to high heat. Cook lemongrass, ginger, garlic and chilli (if using) for 1 minute. Add turkey mince and cook for a further 5–6 minutes, breaking up mince, until browned and cooked through. Mix in spring onion, fish sauce, soy sauce, lemon juice and brown sugar. Remove from heat.

In a medium bowl combine capsicum, carrots, bean sprouts and spring onion. Set aside.

In a small bowl, mix together all dipping sauce ingredients and set aside.

Place vermicelli noodles in a small, heat-proof, bowl and pour over boiling water to cover. Stir to separate strands, cover with a plate and leave for about 4 minutes until soft. Drain and use kitchen scissors to snip in a few places. Drizzle with a little sesame oil and set half the noodles aside as you will only need half the noodles for this meal.

Place vermicelli noodles in a lettuce leaf, followed by some turkey mince, vegetables and herbs. Spoon over dipping sauce, roll up and eat.
