Spiced Chicken and Mango Pizzas with Salad and Curry Mayo

Tasty spiced chicken, mango and capsicum pizzas


Ingredients

SPICED CHICKEN AND MANGO PIZZAS

  • 250g chicken thighs
  • 2 teaspoons Indian spice mix
  • 1/2 red onion, thinly sliced
  • 2 pizza bases
  • 2 tablespoons tomato paste
  • 1/3 can mango slices
  • 1 cup grated edam cheese
  • 1/2 capsicum, core and seeds removed, thinly sliced

SALAD AND CURRY MAYO

  • 1 tablespoon mayonnaise
  • Pinch curry powder
  • 1 teaspoon mango juice
  • 1 tomato
  • 1/2 bag baby spinach leaves
  • 2 tablespoons chopped coriander, to serve

Steps

  1. oven to 220°C. Preheat an oven tray (or pizza stone).
  2. Pat chicken dry with paper towels and cut into 1cm strips. Mix with Indian spice mix and a pinch of salt, then leave to marinate for 5 minutes while you prepare the rest of the meal.
  3. Heat a drizzle of oil in a small fry-pan on medium to high heat. Fry onion for 3 minutes, until softened and golden. Remove from pan and set aside. Add a drizzle more oil to pan and fry chicken for about 1 minute each side until golden (it does not need to be cooked through yet).
  4. Lay pizza bases on a flat surface. Divide tomato paste between bases and spread to cover. Drain mango through a sieve (reserving liquid), pat dry with paper towels and thinly slice. Sprinkle cheese evenly over bases, then top with onion, chicken, mango and capsicum.
  5. Carefully place pizzas onto preheated tray (or stone). Cook pizzas until base is crisp and golden around edges, 15–20 minutes.
  6. While pizzas are cooking, mix mayonnaise, curry powder and mango juice together in a small bowl and set aside. Cut tomato into wedges and place with spinach in a bowl or on a platter.
  7. Cut pizzas into wedges, place a few pieces onto each plate with salad on the side. Drizzle over curry mayo. Alternatively, serve a few spinach leaves with tomato wedges on top of pizzas with a drizzle of curry mayo. Divide pizzas between plates and garnish with coriander.
