
Thai Beef Stir-Fry with Edamame & Lime

Ingredients
Rice
- 35g brown rice
Stir-Fry
- 1/4 tsp sesame seeds
- 1 tsp Thai green curry paste
- 1 tsp soy sauce
- 1/2 lime, zested & juiced
- 1/4 tsp sesame oil
- 1/2 pack green beans, halved
- 1/2 baby bok choy, thinly sliced
- 1/4 cup edamame beans
Beef
- 140g lean beef rump steak, thinly sliced
- 1/4 tsp oil
To Serve
- 1/2 bunch coriander, leaves picked

Before you start. Bring a small pot of salted water to the boil.

Cook rice. Cook rice in pot of boiling water for about 25 minutes, until tender. Drain, return to pot and keep warm.

Start stir-fry. Heat a dry fry pan on medium heat. Add sesame seeds and toast for about 1-2 minutes, until golden. Transfer to a bowl and reserve pan. Add curry paste, soy sauce, lime zest and juice and sesame oil to bowl with sesame seeds and whisk to combine. Set aside. Prep green beans and bok choy.

Prep & cook beef. Pat beef dry and thinly slice. Heat oil in reserved fry-pan on high heat. Add beef and cook for about 3 minutes, until browned. Remove from pan and return pan to heat.

Finish stir-fry. Add edamame and green beans to pan with a splash of water and stir-fry for about 3 minutes. Add bok choy and cook for a further minute.

Return beef to pan along with any juices and stir through to heat for 1 minute. Remove from heat and stir through curry paste mixture. Season to taste with salt and pepper.

To finish. Prep coriander.

Serve. Rice topped with beef stir-fry and coriander.
