Beef & Pork Pie with Smashed Super Greens & Feta

Ingredients

Pie

  • 1/2 red onion, finely chopped
  • 1/2 leek, finely chopped
  • 1/2 tsp oil
  • 100g diced pumpkin
  • 1/2 tsp oil
  • 250g lean ground beef & pork
  • 1 pack pie spices
  • 1/2 pack tomato paste
  • 1 cup beef stock
  • 1/2 tsp salt

Greens

  • 1/2 broccoli, finely chopped
  • 30g feta cheese, crumbled
  • 250g frozen peas
  • 1/2 pack baby spinach
  • 1 pack sesame seeds

Steps

  1. Before you start. Preheat oven grill to high. Bring a medium pot of hot, salted water to the boil. Set aside a baking dish about 20 x 25cm.
  2. Prep pie & greens. Prep onion and leek. Prep broccoli and feta and set aside.
  3. Start pie. Heat oil in a medium fry-pan on mediumhigh heat. Add onion, leek and pumpkin and cook for about 5 minutes. Set veggies aside in a bowl and return pan to heat with oil.
  4. Add beef and pork to pan and cook for about 3 minutes, breaking up as it cooks. Add pie spices and tomato paste and cook for about 30 seconds, until fragrant. Return veggies to pan along with stock and salt. Simmer for 5-6 minutes, until thick, before transferring to baking dish.
  5. Cook greens. Cook broccoli and peas in pot of boiling water for about 5 minutes, until tender. Add spinach, stir and drain. Return to pot and mash with a potato masher. Season to taste with salt and pepper.
  6. Grill pie. Top pie with greens and spread out evenly. Sprinkle over feta and sesame seeds. Grill for 3-5 minutes, until seeds and cheese are golden.
  7. Serve. Pie topped with greens.
