Middle Eastern Beef Bowl with Garlic Pita

Ingredients

Veggies

  • 1 parsnip, cut into batons
  • 1/4 cauliflower, cut into small florets
  • 1 carrot, cut into batons
  • 1/2 red onion, cut into wedges
  • 1/4 pack sumac spices
  • 1 drizzle of oil

Bulgur

  • 1 1/2 cup chicken stock
  • 1/4 tsp salt
  • 1 pack bulgur wheat

Beef

  • 1 drizzle of oil
  • 300g beef mince
  • 3/4 pack sumac spices
  • 1/2 tsp salt

Pita

  • 1 pack garlic pita breads, cut into wedges

To Serve

  • 1 pack olives
  • 2 Tbsp hummus
  • 2 Tbsp yoghurt

Steps

  1. Before you start. Preheat oven to 220°C (or 200°C fan bake).
  2. Prep & cook veggies. Prep parsnip, cauliflower, carrot and onion. Toss on a lined oven tray with first measure of sumac spices and oil. Season with salt and pepper and roast on upper oven rack for about 25 minutes or until tender.
  3. Cook bulgur. Place stock and salt in a small pot and bring to the boil. Add bulgur, cover, remove from heat and leave to soak for 15-18 minutes, until grains are tender. Season to taste with salt and pepper.
  4. Cook beef. Heat oil in a medium fry-pan on high heat. Cook beef for about 5 minutes, until browned. Add remaining sumac spices and salt and cook for 3 minutes, until beef is cooked through and spices are fragrant. Keep warm.
  5. Prep & warm pita. Prep pita bread and place on a lined oven tray. When veggies have 5 minutes cook time remaining, cook pita on lower oven rack for about 5 minutes or until warmed through and golden.
  6. Serve. Bulgur topped with beef, veggies, pita bread, olives, hummus and yoghurt.
