
Crispy Chicken Burgers

Crispy chicken burgers with pickled courgette, slaw and sesame buns.
Ingredients
Pickles
- 1/4 cup vinegar
- 1/4 tsp salt
- 3/4 tsp sugar
- 1/4 tsp garlic chilli blend
- 1 Lebanese cucumber, thinly sliced into rounds
Chicken
- 300g free range chicken breasts, cut into steaks
- 1/2 tsp salt
- 1 pack chicken flour
- 1 drizzle of oil
Buns & Slaw
- 1/2 pack sesame burger buns, cut in half
- 1 pack slaw
- 2 Tbsp mayonnaise
To Serve
- 3 Tbsp sweet chilli sauce

Before you start. Preheat oven to high grill.

Prep pickles. Prep cucumber.

Make pickles. Combine vinegar, salt, sugar and garlic chilli blend in a small pot and bring to the boil. Add cucumber to pot, remove from heat and set aside for 20 minutes, stirring occasionally, until softened. Drain.

Prep chicken. Pat chicken dry and cut into steaks. Place your hand flat on top of chicken and slice through horizontally. Cut each steak into 2-3 pieces and toss in a medium bowl with salt and chicken flour. Toss to coat.

Cook chicken. Heat oil in a medium fry-pan on medium heat and cook chicken, in batches, for about 5 minutes each side, until golden and cooked though. Set chicken aside on paper towels.

Prep buns. Prep buns and place on an oven tray. Toast under grill for about 2 minutes, until golden.

Prep slaw. In a medium bowl, mix slaw and mayonnaise together. Season to taste with salt and pepper.

Serve. Buns filled with slaw, chicken, pickles and sweet chilli sauce. Serve extra slaw on the side.
