
Bang Bang Chicken with Peanut Sauce & Brown Rice

Ingredients
Rice
- 75g brown rice
Sesame Seeds
- 1/2 pack sesame seeds
Peanut Sauce
- 1/2 tsp ginger, minced
- 1/2 Tbsp soy sauce
- 1/2 pack smooth peanut butter
- 1/2 tsp honey
- 1/4 cup lite coconut milk
Chicken
- 275g free range lean chicken breasts, cut into steaks
- 1 tsp oil
Garnishes
- 1/2 baby cos lettuce, thinly sliced
- 1/2 Lebanese cucumber, cut in half lengthways & thinly sliced
- 1/2 carrot, grated
- 1 radish, cut in half lengthways & thinly sliced
- 1 bunch mint, leaves finely sliced
- 1/2 pack mung bean sprouts
Steps

Before you start. Bring a medium pot of salted water to the boil.

Cook rice. Cook rice in pot of boiling water for 18-20 minutes, until tender. Drain and return to pot. Keep warm.

Toast sesame seeds. Heat a medium, dry pot on medium heat. Add sesame seeds and toast for 1-2 minutes, stirring regularly, until golden. Remove from pot, set aside and reserve pot.

Prep peanut sauce. Prep ginger and add to reserved pot with remaining peanut sauce ingredients. Bring to a simmer and mix, until smooth. Reduce heat to low and simmer, stirring often, for about 2 minutes, until thickened slightly. Remove from heat and season to taste with salt and pepper.

Prep chicken. Pat chicken dry and cut into steaks. Place your hand flat on top of chicken and slice through horizontally. Season with salt.

Cook chicken. Heat oil in a medium fry-pan on mediumhigh heat. Cook chicken for 3-5 minutes each side (depending on thickness), or until cooked through. Rest, covered. Dice 2cm, then toss through any resting juices.

Prep garnishes. Prep lettuce, cucumber, carrot, radish and mint.

Serve. Rice with chicken, peanut sauce, sesame seeds, garnishes and mung bean sprouts.
