Pork and vegetable noodles stir-fried in a soy, sweet chilli, fish, and honey sauce
Ingredients
PORK AND VEGETABLE NOODLES
- 1 tablespoon oil (e.g. canola, sunflower)
- 450 g pork mince
- 2 cloves garlic, minced
- 2 teaspoons finely grated ginger
- 1 tablespoon oil (e.g. canola, sunflower)
- 2 spring onions, white part only, thinly sliced
- 2 baby bok choy, finely shredded
- 2 carrots, peeled, cut into thin matchsticks or grated
- 1 capsicum, core and seeds removed and thinly sliced
- 350 g fresh noodles
STIR-FRY SAUCE
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon sweet chilli sauce
- 1/4 cup water
- 1 tablespoon runny honey
- 1 teaspoon cornflour
TO SERVE
- 1 tablespoon sweet chilli sauce (optional, adults)
- 2 spring onions, green part only, thinly sliced
- 1/4 cup chopped peanuts
- 2 tablespoons chopped coriander (optional, adults)
- 1 lemon, cut into wedges (optional, adults)

a full kettle to the boil.

Heat oil in a large wok or fry-pan (preferably non-stick) on high heat. Cook pork, garlic and ginger with a pinch of salt for about 6 minutes until well browned and just cooked through, break mince up with wooden spoon or fork as it cooks. Set aside in a large bowl. Keep pan on heat.

Add second measure of oil to wok/pan, add spring onion (white part), bok choy, carrots and capsicum, stir-fry for about 2 minutes, or until bok choy begins to wilt. Set aside in bowl with pork. Combine all stir-fry sauce ingredients in a small bowl.

Pour boiling water over noodles, gently separate strands using a fork then drain well immediately. Using same pan on medium heat, add noodles and stir-fry sauce. Stir-fry for 1 minute to coat noodles in sauce. Return pork and vegetables to pan and toss until heated through, about 1 minute.

Place pork and vegetable noodles into bowls, drizzle over a little sweet chilli sauce (if using), garnish with spring onion (green part), peanuts, coriander and a squeeze of lemon juice (if using).
