
Beef Burgers with Sweet Chilli Kumara Bites

Traditional burgers with delicious sweet chilli kumara bites!
Ingredients
SWEET CHILLI KUMARA BITES
- 500g red kumara, scrubbed and diced 3cm
- 1 tablespoon sweet chilli sauce
BEEF BURGERS
- 600g beef mince
- 1 brown onion, grated
- 1 cup panko breadcrumbs
- 1 egg
- 1 tablespoon Worcestershire sauce
- 1 1/2 tablespoons mustard (e.g. wholegrain or Dijon)
- 2 tablespoons tomato sauce
- 1 teaspoon salt
- 1/2 cup grated colby cheese
TO SERVE
- 5 burger buns, cut in half horizontally
- 2 tomatoes
- 1 cos lettuce
- Mayonnaise
- Tomato sauce, BBQ sauce or tomato chutney

oven to 220°C. Line two oven trays with baking paper. Preheat BBQ hot plate to medium (if using).

Toss kumara and sweet chilli sauce with a drizzle of olive oil on first prepared oventray. Season with salt. Bake for about 18 minutes, or until golden and sticky. Turn once during cooking.

While kumara cooks, prepare burgers. In a large bowl, combine all beef burger ingredients (except cheese) and use clean hands to mix well. Use a ½ cup measure to scoop out mixture and shape into 1.5cm - thick patties (this should make 6 large patties).

Heat a drizzle of oil in a large fry-pan on medium heat. Cook patties, in batches, for 3–4 minutes each side, or until just cooked through. Add more oil as required. Alternatively, cook on BBQ hot plate.

When kumara has finished cooking, top each patty with a small amount of cheese. Push kumara to side of first tray, and carefully place patties on other side. Bake a further 2 minutes, or until cheese is melted. Place burger buns, cut-side up, on second prepared tray and toast in oven for 2 minutes to warm. Alternatively, toast on BBQ hot plate.

Thinly slice tomatoes, trim bottom 4cm off lettuce, separate leaves.

Spread mayonnaise on bottom half of each bun and sauce/ chutney on top half. Starting with the bottom half, top bun with a lettuce leaf, a beef patty and 1–2 slices of tomato. Serve remaining salad and sweet chilli kumara bites on the side.
