Caramelised Cauliflower, Feta and Bulgur Salad with Pan-Fried Fish

You'll fall in love with caramelised cauli. Cooking cauliflower in the pan with onion and a little salt gives it a delicious nutty flavour


Ingredients

CARAMELISED CAULIFLOWER, FETA AND BULGUR SALAD

  • 1/2 cup bulgur wheat
  • 1/2 head cauliflower, diced 1–2cm
  • 1 brown onion, finely diced
  • 1/2–1 chilli, seeds removed and finely chopped
  • 1/4 cup golden raisins
  • Zest and juice of 1/4 a lemon
  • 100g feta cheese, roughly crumbled
  • 3 tablespoons chopped parsley

PAN-FRIED FISH

  • 300g fish fillets
  • 3 tablespoons of flour seasoned with 1/2 teaspoon salt

TO SERVE

  • 1/2 bag mesclun salad
  • 20g sliced almonds
  • 1/2 a lemon, cut into wedges

Steps

  1. a full kettle to the boil.
  2. Place bulgur and a pinch of salt in a medium, heat-proof, bowl and cover with boiling water. Cover with cling film or a plate and leave to soak for about 15 minutes until grains are tender. Drain well and drizzle with a little olive oil.
  3. While bulgur is soaking, heat a drizzle of oil in a large fry-pan on high heat. Cook cauliflower, onions and pinch salt for about 6 minutes until just tender and starting to colour. Add chilli, raisins, lemon zest and juice and toss to combine. Remove from heat, transfer to a large bowl.
  4. Add cooked bulgur, feta and parsley to bowl with cauliflower. Season with salt and pepper and mix to combine.
  5. Wipe out pan with paper towels and return to high heat with a drizzle of oil. Pat fish dry with paper towels and remove any remaining scales or bones. Dust with seasoned flour and fry for about 2 minutes each side or until just cooked (depending on thickness).
  6. Divide mesclun and caramelised cauliflower, feta and bulgur salad between plates. Top with fish and sprinkle over almonds. Squeeze over a wedge of lemon just before serving.
