Cheese Burger Salad with Ciabatta Crouton and Gherkin Dressing

This salad is our take on a deconstructed cheese burger! The tangy gherkin dressing brings everything together perfectly.


Ingredients

BEEF PATTIES

  • 600g beef mince
  • 1 brown onion, grated
  • 1 cup fine breadcrumbs
  • 1 egg
  • 1 tablespoon Worcestershire sauce
  • 1½ tablespoons mustard (e.g. wholegrain, Dijon)
  • 2 tablespoons tomato sauce
  • 1 teaspoon salt
  • ½ cup grated tasty cheese

SALAD

  • 350g ciabatta bread, diced 2–3cm
  • 150g green beans, ends trimmed and cut in half
  • 1 iceberg lettuce
  • 2 tomatoes
  • 1 avocado

GHERKIN DRESSING

  • 1 teaspoon Dijon mustard
  • 1/3 cup mayonnaise
  • 1½ tablespoons water
  • 2 gherkins, finely chopped

Steps

  1. oven to 200⁰C or BBQ hot plate to medium (if using BBQ). Line two oven trays with baking paper. Bring a full kettle of water to the boil.
  2. Combine all beef patty ingredients (except cheese) in a large bowl and mix well using clean hands. Use a ½ cup measure to scoop out mixture and shape into 1.5cm-thick patties (makes 6–8 patties). Set aside on a pla
  3. In a large bowl, toss diced ciabatta with a good drizzle of olive oil and season with salt. Scatter on first prepared tray, in a single layer. Bake for about 8 minutes, or until golden and crispy.
  4. While croutons are cooking, cook beef patties. Heat a drizzle of oil in a large fry-pan (preferably non-stick) on medium to high heat. Brown patties, in two batches, for 1–2 minutes each side (they won’t be completely cooked yet). Add more oil as needed. Transfer patties to second prepared tray, sprinkle evenly with cheese and finish cooking in oven for 5 minutes or until cooked through and cheese has melted. Alternatively, use BBQ to cook the patties all the way through, 5–6 minutes each side. Sprinkle cheese over at the end of cook time.
  5. Place beans in a medium, heat-proof bowl and pour over boiling water to cover. Leave for 2 minutes or until just tender then drain.
  6. In a small bowl, combine all gherkin dressing ingredients. Roughly chop lettuce, slice tomatoes, and slice avocado, place into a large bowl or platter. Toss croutons and beans through.
  7. Divide salad between plates. Top with a cheeseburger patty and drizzle over gherkin dressing.
