Seared Beef Sirloin Steak with Soba Noodle Salad

Soba is the Japanese name for buckwheat. It usually refers to thin noodles made from buckwheat flour, or a combination of buckwheat and wheat flours.


Ingredients

Noodle Salad

  • 1 capsicum, thinly sliced
  • 1 twin pack baby bok choy, thinly sliced
  • 1 telegraph cucumber, cut in half & thinly sliced on an angle
  • 1 Tbsp sesame oil
  • 1 Tbsp rice wine vinegar
  • 1 pack soba noodles
  • 1 Tbsp soy sauce

Beef

  • 1 Tbsp sesame oil
  • 1 Tbsp soy sauce
  • 600g beef sirloin steaks

To Serve

  • 1 pack chopped peanuts
  • 1 pack sesame dressing
  • 1 bunch coriander, chopped

Steps

  1. Preheat BBQ grill to medium-high. Bring a medium pot of salted water to the boil
  2. Pat beef dry and toss in a medium bowl with soy sauce and sesame oil. Set aside to marinate.
  3. Cook noodles in pot of boiling water for about 4 minutes, until just tender. Drain, refresh under cold water and drain again well. Place in a large bowl and toss with soy sauce, vinegar and sesame oil.
  4. Cook beef on BBQ grill for about 5 minutes each side, for medium (depending on thickness), or until cooked to your liking. Rest, covered, for 5 minutes before slicing thinly against the grain. Alternatively, cook in a large fry-pan on medium-high heat.
  5. Prep cucumber, bok choy and capsicum. Add to bowl with noodles and toss to combine. Season with pepper.
  6. Prep coriander.
  7. Noodle salad topped with beef, sesame dressing, peanuts and coriander.
