Asian Turkey and Lettuce Wraps with Hoisin Dressing

The Asian turkey mince could be made in advance and stored in an airtight container in the fridge. Just heat it up when you're ready to eat. Use a non-stick pan for best results! Place all ingredients in the middle of the table and let everyone construct their own lettuce wraps. Alternatively, you could place the noodles on your plate and top with all the other ingredients to make a salad.


Ingredients

VEGETABLES

  • 2 baby cos lettuce
  • 1/2 sweet Palermo capsicum
  • 1/2 telegraph cucumber
  • 1 spring onion, green part only

ASIAN TURKEY MINCE AND VERMICELLI

  • 250g vermicelli noodles
  • 1 tablespoon oil
  • 600g turkey mince
  • 1/2 sweet Palermo capsicum, seeds removed and finely diced
  • 1 carrot, grated
  • 1 tablespoon soy sauce
  • 1 teaspoon fish sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon finely grated ginger
  • 2 spring onions, thinly sliced

HOISIN DRESSING

  • Remaining hoisin sauce
  • 1 tablespoon water
  • 2 teaspoons sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon sweet chilli sauce

Steps

  1. a full kettle to the boil.
  2. Cut bases from lettuce and separate leaves; remove seeds from capsicum and thinly slice; cut cucumber into thin matchsticks; thinly slice spring onion on an angle. Set all aside.
  3. In a heat-proof bowl, pour boiling water over noodles and use a fork to separate strands. Leave for 5 minutes then drain. Drizzle with a little sesame or olive oil to prevent sticking and use kitchen scissors to cut noodles in a few places to make them easier to eat.
  4. Heat oil in a fry-pan on mediumhigh heat. Add turkey mince and cook for 2–3 minutes, breaking up mince with a wooden spoon. Add capsicum and carrot and stir-fry a further 3–4 minutes, until tender.
  5. Add soy sauce, fish sauce, first measure of hoisin sauce, ginger, and spring onions to pan. Toss until well combined and heated through, about 1 minute.
  6. In a bowl, combine all hoisin dressing ingredients together.
  7. Place small piles of vermicelli noodles into lettuce cups then top with Asian turkey mince, capsicum, cucumber, and spring onion. Drizzle with hoisin dressing.
