
Cumberland Sausage Pita Wraps with Salad and Homemade Tomato Sauce

Pulling away chunks of meat is faster and easier than rolling meatballs – and gives this meal a rustic look.
Ingredients
HOMEMADE TOMATO SAUCE
- 1/2 red onion, finely sliced
- 1 tablespoon GF soy sauce
- 1 can chopped tomatoes
- 2 teaspoons brown sugar
- 1/4 teaspoon salt
CUMBERLAND SAUSAGE PITA WRAPS
- 450g Cumberland pork sausage grind
- 5 GF Lebanese pita breads
SALAD
- 1/2 iceberg lettuce
- 1/2 telegraph cucumber
- 1 apple
- 1/2 red onion (optional, adults)
HONEY MUSTARD DRESSING
- 1 teaspoon runny honey
- 1/2 teaspoon white wine vinegar
- 1 teaspoon GF Dijon mustard
- 1/4 cup GF mayonnaise
TO SERVE
- 2 tablespoons chopped parsley leaves and stalks

oven to 220°C. Line two oven trays with baking paper.

Heat a drizzle of oil in a pot or fry-pan on medium heat. Cook onion for about 3 minutes until soft. Stir in soy sauce, tomatoes, sugar and salt. Bring to a simmer, reduce heat to low and simmer for 6–8 minutes until thickened slightly. Season with pepper.

Roughly pull away pieces of sausage grind (about one tablespoon per piece) and arrange on first prepared tray. Bake for 6–7 minutes until just cooked through.

Thinly slice iceberg lettuce; halve cucumber lengthways and thinly slice; grate apple or cut into thin matchsticks; thinly slice red onion (if using). Mix all honey mustard dressing ingredients together in a bowl. Toss half the dressing with salad just before serving.

Cut pita breads in half for the younger kids or leave whole for bigger hands or adults. Overlap pita breads on second prepared tray and warm in oven for 2–3 minutes until heated through.

Place a few Cumberland sausage pieces, iceberg and apple salad and homemade tomato sauce in the middle of the pita breads. Drizzle over extra dressing if required and sprinkle with parsley. Roll up to eat with your hands. Serve extra salad on the side.
