Teriyaki Beef with Broccoli Stir-Fry and Jasmine Rice

This teriyaki sauce is tasty, you will want to make it again and again. It is delicious on fish or chicken too.
Ingredients
JASMINE RICE
- 1 1/2 cups jasmine rice
- 2 1/4 cups water
TERIYAKI SAUCE
- 1/4 cup soy sauce
- 3 tablespoons brown sugar
- 1/2 cup water
- 1 tablespoon sesame oil
- 2 teaspoons rice vinegar
- 1 teaspoon grated ginger
- 1 tablespoon cornflour mixed with 1 tablespoon water
- 1 tablespoon sesame seeds
BROCCOLI STIR-FRY
- 1 head broccoli
- 100g green beans
- 1 cup frozen peas, defrosted
BEEF
- 450g beef sirloin steaks (at room temperature)

BBQ grill to high (if using).

Combine rice, water and a pinch of salt in large pot and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid during cooking.

In a small pot, combine all teriyaki sauce ingredients (except sesame seeds) and bring to the boil. Simmer on lowmedium heat for 3–5 minutes, until sauce thickens slightly. Stir through sesame seeds.

While sauce is simmering, cut broccoli into small florets and trim ends from beans. Set aside.

Pat beef dry and season. Heat a drizzle of oil in a fry-pan on medium-high heat. Cook for 2–3 minutes each side then use tongs to hold down beef on side with fat for about 1 minute, for medium-rare (depending on thickness) or until cooked to your liking. Cover with foil, to rest then slice.

Wipe pan clean with a paper towel and return to mediumhigh heat with a drizzle of oil. Stir-fry broccoli and beans for 3–4 minutes, tossing often. Add peas and cook a further 1 minute until warmed through.

Spoon ¾ cup cooked rice per person onto each plate then top with steak. Serve broccoli stir-fry on the side and drizzle over teriyaki sauce.
