
Sumac Pork Sirloin with Kumara Mash and Chilli Apple Salsa

This is a deliciously tender pork recipe and the side salsa has a fruity kick!
Ingredients
KUMARA MASH
- 800g orange kumara, peeled and diced 2cm
- 2 tablespoons butter
- 3–4 tablespoons milk
SUMAC PORK SIRLOIN
- 1 tablespoon olive oil
- 600g pork sirloin steaks (at room temperature)
- 1 tablespoon sumac pork spice
CHILLI APPLE SALSA
- 1 tablespoon mild sweet chilli sauce
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 apple
- 1 capsicum
- 2 spring onions
- 1/2 telegraph cucumber
- 1 tablespoon chopped mint leaves
- 1 tablespoon chopped coriander leaves and stalks

a medium pot of salted water (with lid) to the boil.

Cook kumara in pot of boiling water, covered, for about 15 minutes or until tender. Drain well and return to pot with butter and milk. Use a potato masher to mash until smooth and season with salt and pepper. Cover to keep warm.

While kumara is cooking, heat oil in a large (preferably heavybased) fry-pan on medium heat. Pat pork dry with paper towels and cut any larger pieces in half. Place on a plate, lightly drizzle with oil, season with salt, pepper and sumac pork spice mix.

Fry pork for 4–6 minutes each side, or until just cooked through (depending on thickness). If pork starts to burn reduce heat.

Wrap in tinfoil and rest for 5 minutes before slicing against the grain.

While pork is cooking, prepare the chilli apple salsa. Place sweet chilli sauce, lemon juice and olive oil in a bowl. Remove core from apple and dice 1cm; remove seeds from capsicum and dice 1cm; thinly slice spring onions; dice cucumber 1cm. Add all to bowl along with the herbs. Mix to combine.

Divide kumara mash between plates, top with sliced pork and chilli apple salsa.
