Pasta alla Norma with Rigatoni & Parmesan Cheese

Ingredients

To Serve

  • 1 pack grated Parmesan

Sauce

  • 1/2 cup vegetable stock
  • 2 tsp balsamic vinegar
  • 1 pack baby spinach
  • 1 can cherry tomatoes
  • 1 pack tomato paste
  • 1/4 tsp salt
  • 1/2 brown onion, thinly sliced
  • 1 eggplant, diced 2cm
  • 2 garlic clove, minced
  • 1 drizzle of oil
  • 1 pack Veggie Italian Herbs

Pasta

  • 1/3 pack rigatoni
  • 1 drizzle of olive oil

Steps

  1. Bring a medium pot of salted water to the boil.
  2. Prep onion, eggplant and garlic.
  3. Heat oil in a medium fry-pan on medium-high heat and cook onion, eggplant and salt for 5-7 minutes, until browned. Add garlic, Italian herbs, tomato paste, canned tomatoes, stock and vinegar. Bring to a simmer and cook for about 10 minutes, until thickened and reduced. Stir through spinach to wilt and season to taste with salt and pepper.
  4. Cook pasta in pot of boiling water for about 10 minutes, until tender. Drain, return to pot and toss with olive oil to prevent sticking.
  5. Pasta topped with sauce and Parmesan.
