Ingredients
To Serve
- 1 pack grated Parmesan
Pasta
- 2/3 pack rigatoni
- 1 drizzle of olive oil
Sauce
- 1 pack baby spinach
- 1 Tbsp balsamic vinegar
- 1 cup vegetable stock
- 1 can cherry tomatoes
- 1 pack tomato paste
- 1 pack veggie Italian herbs
- 1/2 tsp salt
- 1 drizzle of oil
- 1/2 garlic bulb, minced
- 1 pack roasted capsicum, thinly sliced
- 1 eggplant, diced 2cm
- 1 brown onion, thinly sliced
Steps

Bring a large pot of salted water to the boil.

Prep onion, eggplant, capsicum and garlic.

Heat oil in a large fry-pan on medium-high heat and cook onion, eggplant and salt for 5-7 minutes, until browned. Add capsicum, garlic, Italian herbs, tomato paste, canned tomatoes, stock and vinegar. Bring to a simmer and cook for about 10 minutes, until thickened and reduced. Stir through spinach to wilt and season to taste with salt and pepper.

Cook pasta in pot of boiling water for about 10 minutes, until tender. Drain and return to pot and toss with olive oil to prevent sticking.

Pasta topped with sauce and parmesan.
