Parsley Beef Schnitzel with Chunky Kumara and Courgette, Apple and Carrot Slaw

Ingredients

Chunky Kumara

  • 600g orange kumara, scrubbed and diced 2cm
  • 1 tablespoon olive oil

Parsley Beef Schnitzel

  • 1/2 cup GF flour seasoned with 3/4 teaspoon salt
  • 1 egg
  • 1/4 cup milk
  • 1 1/2 cups GF panko breadcrumbs
  • 3 tablespoons finely chopped parsley leaves and stalks
  • 450g beef schnitzel (at room temperature)

Courgette, Carrot and Carrot Slaw

  • 2 carrots
  • 1 courgette
  • 1 apple
  • 2 tablespoons finely chopped parsley leaves and stalks

Dressing

  • 2 tablespoons GF mayonnaise
  • 1 teaspoon GF mustard (e.g. Dijon, wholegrain)
  • 1 tablespoon GF vinegar (e.g. white wine, red wine, cider)
  • 1/2 teaspoon runny honey

To Serve

  • 1/4 cup GF tomato sauce

Steps

  1. oven to 220°C. Line an oven tray with baking paper.
  2. Toss kumara with olive oil and a pinch of salt on prepared tray. Roast until golden, about 25 minutes. Turn once halfway through cooking.
  3. Place seasoned flour in a bowl, beat egg with milk in a second bowl and mix breadcrumbs with parsley in a third bowl.
  4. Cut schnitzel into smaller pieces, 3‰–Š4 cm wide and coat first in seasoned flour, then egg mixture and finally parsley breadcrumbs, shaking off excess as you go. Set aside.
  5. Prepare salad; peel carrots, cut carrots, courgette and apple into thin matchsticks or grate; place all in a medium bowl with parsley. In a bowl, mix all dressing ingredients together and toss through slaw.
  6. Heat oil in a large fry-pan on medium-high heat. Fry schnitzel, in batches, until golden and just cooked, 1…–2 minutes each side. Wipe out pan between batches and add extra oil. Set aside, cover with foil to keep warm.
  7. Place chunky kumara on each plate with a few pieces of schnitzel and a dollop of tomato sauce, if desired. Serve courgette, apple and carrot slaw on the side.
