
Lamb Kofta Meatloaves with Couscous Tabbouleh & Tzatziki

Ingredients
Tzatziki
- 1/3 Lebanese cucumber, grated
- 3 Tbsp yoghurt
Tabbouleh
- 1 pack baby spinach, chopped
- 1 drizzle of olive oil
- 1 tomato, diced
- 2/3 Lebanese cucumber, diced
- 1/4 red onion, finely diced
- 1/2 cup couscous
- 1/2 cup chicken stock
Kofta
- 1/2 red onion, finely diced
- 1 carrot, grated
- 300g lamb mince
- 1 pack Middle Eastern spices
- 1/2 pack breadcrumbs
- 1 egg
- 1/4 tsp salt
- 2 Tbsp tomato sauce

Preheat oven to 220°C (or 200°C fan bake).

Prep first measure of onion and carrot and add to a medium bowl with lamb, Middle Eastern spices, breadcrumbs, egg and salt. Mix well to combine and divide mix into 4. Grease a muffin tray and place a kofta into each hole. Flatten the top slightly and spoon 1/2 Tbsp of tomato sauce onto each. Bake for about 20 minutes, until cooked through.

While the lamb is cooking, add stock to a medium pot and bring to the boil with a lid on. Once boiling, add couscous and a pinch of salt. Stir, cover with the lid and leave for 5 minutes. Remove lid and fluff up grains with a fork. Transfer to a large bowl.

Prep second measure of onion, first measure of cucumber, tomato and spinach. Add to bowl with couscous, toss with olive oil and season to taste with salt and pepper.

Prep second measure of cucumber and mix in a small bowl with yoghurt.
