Hawaiian BBQ Pizzas with Salad

A delicious pizza that the whole family will love!
Ingredients
HAWAIIAN BBQ PIZZAS
- 3 pizza bases
- 1 can pizza sauce
- 1 can pineapple pieces, drained
- 1/2 red onion, thinly sliced (optional, adults)
- 200g white button mushrooms, stems trimmed and thinly sliced
- 1 capsicum, core and seeds removed and finely diced
- 70g BBQ sauce
- 1 1/2 cups grated colby cheese
SALAD
- 1 baby cos lettuce
- 1/2 telegraph cucumber
- 1 carrot
- Salad dressing of your choice

oven to 220°C. Preheat two oven trays. Alternatively, preheat two pizza stones (if you have them).

Lay 3 sheets of baking paper on bench and place a pizza base on top of each. Pour a little olive oil into a bowl and using fingers, rub oil around the circumference of the pizza in a 1.5cm frame. Spread 2 tablespoons of pizza sauce over each base, leaving a bit of an edge for the crust.

Sprinkle over pineapple pieces, onion (if using), mushrooms and capsicum. Drizzle over BBQ sauce, then evenly sprinkle over cheese and season with salt and pepper.

Cut one pizza in half. Lift up baking paper with pizza on top and place one and a half pizzas on each tray/stone (use a fish slice to help with this). Cook pizzas until bases are crispy and golden, 12–14 minutes. Swap position of trays half way through cooking so they cook evenly. Slice into 6.

While pizzas are cooking, finely slice lettuce; cut cucumber in half lengthways and thinly slice; peel and grate carrot. Place all in a large bowl and season with salt and pepper. Toss with a drizzle of extra-virgin olive oil, or your favourite salad dressing just before serving.

Place a few pieces of pizza onto each plate and serve salad on the side.
