Greek Style Lamb Nachos with Garlic Pita Chips & Yoghurt

Ingredients

To Serve

  • 3 Tbsp yoghurt

Salsa

  • 1/4 red onion, finely diced
  • 1 pack baby spinach, chopped
  • 1 garlic clove, minced (optional)
  • 1 drizzle of olive oil
  • 1/2 Tbsp vinegar
  • 1 pack roasted capsicum, diced

Pita Chips

  • 1 pack garlic pita breads, cut into wedges
  • 1 drizzle of oil

Lamb

  • 1/4 tsp salt
  • 1 pack Greek spices
  • 300g lamb mince
  • 1 pack tomato paste
  • 1 can crushed tomatoes
  • 1/2 cup beef stock
  • 1 drizzle of oil
  • 1 carrot, grated
  • 1/4 red onion, finely diced

Steps

  1. Preheat oven to 200°C (or 180°C fan bake).
  2. Prep first measure of onion and carrot. Heat oil in a medium fry-pan on high heat and cook onion, carrot and salt for about 5 minutes, until soft. Add Greek spices, lamb and tomato paste and cook a further 5 minutes, until browned.
  3. Add canned tomatoes and stock to pan, bring to a simmer and cook for 4-5 minutes, until thickened. Season to taste with salt and pepper.
  4. Cut pita into wedges (6-8 pieces per pita) and toss on a lined oven tray with oil. Bake for about 12 minutes, until golden.
  5. Prep second measure of onion, spinach, capsicum and garlic. Toss in a medium bowl with olive oil and vinegar and season to taste with salt and pepper.
  6. Lamb topped with salsa and yoghurt, with pita chips on the side.
