Creamy Pesto Chicken Penne with Parmesan

Ingredients

To Serve

  • 50g grated Parmesan, grated

Penne

  • 1 drizzle of olive oil
  • 2/3 pack pasta
  • 2 broccoli, cut into small florets

Chicken

  • 125g sour cream
  • 100g red pepper pesto
  • 1/2 cup chicken stock
  • 1 drizzle of oil
  • 600g free range chicken breasts, diced 2cm
  • 50g roasted capsicum, thinly sliced
  • 1 garlic clove, minced
  • 1 brown onion, finely diced

Steps

  1. Bring a large pot of salted water to the boil.
  2. Prep onion, garlic, capsicum and broccoli. Set them aside separately. Pat chicken dry and dice in 2cm.
  3. Cook pasta in pot of boiling water for 8 minutes, then add broccoli and cook a further 2 minutes, until both are just tender. Drain and return to pot with olive oil to prevent sticking.
  4. Heat oil in a large fry-pan on high heat and cook garlic, onion and chicken for 5 minutes, until cooked through. Add capsicum and stock to pan and simmer for 3 minutes, until reduced. Remove from heat and stir through red pepper pesto, sour cream and pasta. Season to taste with salt and pepper.
  5. Penne topped with broccoli, red pepper pesto chicken and Parmesan.
