Pulled Chicken and Sundried Tomato Pasta with Courgette Salad

Chicken thighs add a great flavour and will not dry out.


Ingredients

PULLED CHICKEN

  • 300g chicken thighs
  • 1 tablespoon chicken spice mix
  • 1/4 teaspoon salt ™
  • 1/4 teaspoon pepper ™

SUNDRIED TOMATO PASTA

  • 80g semi-dried tomatoes, thinly sliced
  • 2 cloves garlic, thinly sliced
  • 1 fennel bulb, thinly sliced
  • 1/4 cup fennel fronds, roughly chopped
  • 3/4 cup cream
  • 250g fresh tomato fettuccine

COURGETTE SALAD

  • 1 courgette
  • 1 tomato
  • 2–3 tablespoons basil leaves
  • 1 teaspoon extra-virgin olive oil ™
  • 1 teaspoon balsamic vinegar ™

TO SERVE

  • 30g feta cheese

Steps

  1. a large pot of salted water to the boil.
  2. Pat chicken dry with paper towels. In a bowl mix all pulled chicken ingredients with a drizzle of oil, set aside.
  3. Heat a drizzle of oil in a fry-pan on high heat. Cook chicken for 2­ minutes each side. Reduce heat to medium; add semi-dried tomatoes, garlic, both measures of fennel and cook for 4 minutes. Stir in cream and simmer for 5‚ minutes.
  4. Remove chicken from pan and pull the meat apart using 2­ forks. Return pulled chicken to pan.
  5. Cook fettucine in pot of boiling water for 4 minutes, or until just tender. Drain well and add a drizzle of oil to prevent sticking. Add pasta to pulled chicken mixture. Add a splash of cream if pasta looks too dry. Season to taste with salt and pepper.
  6. While chicken and pasta cook, make the salad. Use a vegetable peeler to peel courgette into long thin ribbons. Cut any wide ribbons in half lengthways. Finely dice tomato and chop basil. Gently mix in a bowl with oil, vinegar and season with salt and pepper.
  7. Spoon pulled chicken pasta into bowls. Top with a handful of courgette salad and crumble feta on top.
