Beef Pot Pies with Cheesy Kumara Topping

It's hard to think of any dish more appropriately labeled “comfort food” than Beef Pot Pie. This version is also packed with vegetables and has a healthy kumara topping with a sprinkling of cheese for a little indulgence.


Ingredients

Filling

  • 1 brown onion, finely diced
  • 1 carrot, grated
  • 1 drizzle of oil
  • 600g beef mince
  • 1 pack pie spices
  • 1 1/4 cup water
  • 1 pack pie sauce

Greens

  • 1 broccoli, cut into small florets
  • 250g frozen peas
  • 2 tsp butter

To Serve

  • 2 Tbsp tomato sauce

Mash

  • 800g kumara, peeled & diced
  • 2 tsp butter
  • 90g cheese, grated

Steps

  1. Preheat oven to high grill. Bring a medium pot of hot salted tap water to the boil. Set aside 6 ramekins or a large baking dish.
  2. Prep kumara, then add to a large pot and cover with hot tap water. Bring to the boil and cook on high heat with the lid on for about 20 minutes, until very soft. Drain and mash with butter until smooth. Season with salt and pepper. Prep cheese and set aside.
  3. Prep onion and carrot.
  4. Heat oil in a large fry-pan on medium-high heat. Cook onion and carrot for 3-4 minutes, until soft. Increase heat to high, add beef and cook for 5-6 minutes, stirring, until brown. Add pie spices and cook, stirring, for 1 minute, until fragrant. Stir through water measure and pie sauce, bring to a simmer and cook for about 5 minutes, until sauce has thickened
  5. Evenly divide filling between ramekins/baking dish. Spread mash over to cover and sprinkle with cheese. Grill for 3-5 minutes, until cheese is golden.
  6. Prep broccoli. Add to pot of boiling water along with peas and cook for 2-3 minutes, until just tender. Drain, then toss with butter and season with salt and pepper.
  7. Pies with greens and tomato sauce on the side.
