Thai Style Chicken Burgers with Carrot Chips & Peanut Slaw

Ingredients

To serve

  • 1 pack garlic aioli
  • 2 Tbsp sweet chilli sauce

Chips

  • 4 carrot, cut into chips
  • 1 pack sesame seeds
  • 1 drizzle of oil

Chicken

  • 600g free range chicken breasts, cut into steaks
  • 1 pack Thai Spices
  • 1 pinch of chilli flakes, optional
  • 1 drizzle of oil

Buns

  • 1 pack sesame burger buns, cut in half

Slaw

  • 1 pack slaw
  • 1 pack chopped peanuts
  • 1 drizzle of olive oil
  • 1 Tbsp vinegar

Steps

  1. Preheat oven to 220°C (or 200°C fan bake).
  2. Prep carrot and toss on a lined oven tray with sesame seeds and oil. Season with salt and pepper and roast on upper oven rack for about 20 minutes, until golden and tender.
  3. Pat chicken dry and cut into steaks. Place your hand flat on top of chicken and slice through horizontally. Toss in a medium bowl with Thai spices and chilli flakes and season with salt.
  4. Heat oil in a large fry-pan on medium heat and cook chicken for about 5 minutes each side (depending on thickness), or until cooked through. Rest for a few minutes, before cutting into bun-sized pieces.
  5. Prep buns and place on a second oven tray. Cook on lower oven rack for about 5 minutes, until toasted. In a large bowl, combine slaw, peanuts, olive oil and vinegar together and season to taste with salt and pepper.
  6. Buns filled with sweet chilli, garlic aioli, slaw and chicken. Serve extra slaw and chips on the side.
