
Italian Sausage Pizzas with Salad

Ingredients
ITALIAN SAUSAGE PIZZAS
- 1 red onion, finely sliced
- 1 clove garlic, minced
- 6 GF Italian sausages
- 3 GF pizza bases
- 1/2 –1 can pizza sauce
- 1 capsicum, core and seeds removed and thinly sliced
- 1 1/4 cups Colby cheese, grated
- 3 tablespoons roughly torn basil leaves
SWEET CHILLI CREAM (OPTIONAL)
- 1/2 cup sour cream
- 1–2 tablespoons GF mild sweet chilli sauce
SALAD
- 1 baby cos lettuce
- 1 tomato
- 1 Lebanese cucumber
- 1 carrot
- Drizzle GF balsamic vinegar (optional)

oven to 220°C. Preheat two large oven trays.

Heat a drizzle of oil in a large frypan on medium heat. Cook onion and garlic for about 4 minutes, or until onion is soft and starting to caramelise. Remove from pan and set aside. Keep pan on heat.

Add another drizzle of oil to pan on medium heat and cook sausages, turning often, for about 4 minutes until browned but not cooked through. Set aside to cool slightly before slicing into 1cm-thick pieces. In a bowl, combine sour cream and sweet chilli sauce. Set aside.

Cut one pizza base in half. Lay two sheets of baking paper on bench and place one and a half pizza bases onto each sheet of baking paper. Spread 2 tablespoons of pizza sauce on each base. Top with onion and garlic, sliced sausage, capsicum and cheese.

Carefully lift baking paper (with bases) onto preheated oven trays and bake for 12–15 minutes or until cheese is melted and pizza base is golden. Swap trays halfway to ensure even cooking. Once cooked, evenly sprinkle basil on top.

Thinly slice lettuce; slice tomato into 1cm wedges; slice cucumber in half lengthways, then into halfmoons; peel and grate carrot. Place all in a bowl and drizzle with a little extra-virgin olive oil, balsamic vinegar (if using) and season with salt and pepper.

Slice Italian sausage pizzas into 8 slices (or 4 slices for pizza cut in half). Divide slices between plates and serve with salad on the side. Dollop sweet chilli cream on top of pizza (if using).
