
Sweet Soy Beef Stir-Fry with Asian Greens and Sesame Rice

A super quick and easy beef stir-fry
Ingredients
SESAME RICE
- 1 cup jasmine rice
- 1 ½ cups water
- ½ teaspoon sesame oil
- 1 ½ teaspoons sesame seeds
BEEF STIR-FRY
- 300g beef minute steaks (at room temperature)
- 1 clove garlic
- ½ teaspoon finely grated ginger
- 1 ½ tablespoons soy sauce
- 1 tablespoon sweet chilli sauce
- 1 tablespoon sweet soy beef sauce
- 1 teaspoon sesame oil
ASIAN GREENS
- 1 head broccoli
- 2 spring onions, white part only
- 2 baby bok choy
- 2 tablespoons water
To serve
- 1 ½ teaspoons sesame seeds
- 2 spring onions, green part only

a full kettle to the boil.

Combine rice, water, sesame oil and a pinch of salt in a pot and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid during cooking.

Slice beef into 0.5cm-thick strips; mince garlic. Place beef and garlic in a medium bowl with all remaining beef stir-fry ingredients. Mix to combine and set aside to marinate.

Cut broccoli into small florets. Place in a heat-proof bowl with a pinch of salt and pour over boiling water. Cover with a plate and leave for 5–6 minutes, until bright green and tender. Drain.

Heat a dry, fry-pan or wok on medium-high heat. Toast both measures of sesame seeds until light brown, about 30 seconds. Remove from pan and set aside. Leave pan on heat; add a drizzle of oil and stir-fry beef for 1 minute, until just cooked through. Remove from pan and set aside.

Slice both measures of spring onion (keep white and green part separate); quarter bok choy lengthwise; add white part of spring onion, bok choy, broccoli and water to pan and stir-fry for 2–3 minutes. Return beef to pan and stir-fry a further minute. Fluff up rice and stir through sesame seeds.

spoon ¾ cup cooked sesame rice per person onto each plate and top with sweet soy beef stir-fry. Scatter over green part of spring onions and garnish with remaining sesame seeds.
