Beef & Venison Bolognese Pasta with Parmesan

Ingredients

Bolognese

  • 150g baby spinach, roughly chopped
  • 1 1/2 Tbsp soy sauce
  • 1 1/2 cup beef stock
  • 2 can chopped tomatoes
  • 900g beef & venison mince
  • 1 brown onion, finely diced
  • 2 carrot, grated
  • 250g mushrooms, sliced
  • 1 pack bolognese herbs
  • 60g tomato paste
  • 1 tsp salt

Pasta

  • 1 pack spaghetti
  • 1 drizzle of olive oil

To Serve

  • 70g grated Parmesan

Steps

  1. Bring a large pot of salted water to the boil.
  2. Finely dice onion, grate carrot and slice mushrooms. Heat oil in a medium pot or fry-pan on high heat. Cook onion, carrot and mushrooms for about 7 minutes, until browned and softened.
  3. Add Bolognese herbs, tomato paste, salt and beef and venison mince and cook for about 7 minutes, until browned. Add canned tomatoes, stock and soy sauce to pan. Bring to a simmer, reduce heat to medium and cook for about 8 minutes, until thickened and reduced.
  4. Chop spinach and stir through. Season to taste with salt and pepper.
  5. Cook pasta in pot of boiling water for 8-10 minutes, until just tender. Drain, return to pot and toss with a little oil to prevent sticking.
  6. Spaghetti topped with Bolognese sauce and Parmesan.
