Beef & Venison Bolognese Pasta with Parmesan

Ingredients
Bolognese
- 150g baby spinach, roughly chopped
- 1 1/2 Tbsp soy sauce
- 1 1/2 cup beef stock
- 2 can chopped tomatoes
- 900g beef & venison mince
- 1 brown onion, finely diced
- 2 carrot, grated
- 250g mushrooms, sliced
- 1 pack bolognese herbs
- 60g tomato paste
- 1 tsp salt
Pasta
- 1 pack spaghetti
- 1 drizzle of olive oil
To Serve
- 70g grated Parmesan
Steps

Bring a large pot of salted water to the boil.

Finely dice onion, grate carrot and slice mushrooms. Heat oil in a medium pot or fry-pan on high heat. Cook onion, carrot and mushrooms for about 7 minutes, until browned and softened.

Add Bolognese herbs, tomato paste, salt and beef and venison mince and cook for about 7 minutes, until browned. Add canned tomatoes, stock and soy sauce to pan. Bring to a simmer, reduce heat to medium and cook for about 8 minutes, until thickened and reduced.

Chop spinach and stir through. Season to taste with salt and pepper.

Cook pasta in pot of boiling water for 8-10 minutes, until just tender. Drain, return to pot and toss with a little oil to prevent sticking.

Spaghetti topped with Bolognese sauce and Parmesan.
