Beef Sirloin with Balsamic Tomatoes and Parmesan Oregano Mash

A smooth oregano & parmesan mash


Ingredients

PARMESAN OREGANO MASH

  • 400g potatoes, peeled and cut into even sized pieces
  • Knob of butter
  • 3 tablespoons milk
  • 3 tablespoons finely grated parmesan cheese
  • 2 teaspoons finely chopped oregano leaves

BALSAMIC TOMATOES

  • 1 clove garlic, finely chopped
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon brown sugar
  • 1 teaspoon finely chopped oregano leaves
  • 1 punnet cherry tomatoes

BEEF SIRLOIN

  • 300g sirloin steak
  • 1 tablespoon olive oil

TO SERVE

  • 3–4 handfuls rocket leaves
  • A few pieces of shaved parmesan cheese
  • 1 teaspoon whole oregano leaves, stripped from stalk

Steps

  1. a medium pot of salted water to the boil.
  2. Cook potatoes in pot of boiling water until very soft, 12–15 minutes. Drain and return to pot with butter, milk, parmesan cheese and oregano. Mash until smooth and season to taste with salt and pepper.
  3. Place all balsamic tomato ingredients into a medium bowl and toss to combine. Season with salt and pepper and leave to marinate.
  4. Pat beef dry, rub with olive oil and season with salt and pepper. When potatoes are almost cooked, heat a medium fry-pan on high heat and fry beef for about 3 minutes each side then use tongs to hold down side with fat for 1 minute for medium-rare (depending on thickness), or until cooked to your liking.
  5. Remove from pan and cover to rest for 5 minutes then slice thickly against the grain. Reduce pan temperature to medium.
  6. Once pan has cooled down slightly, add tomatoes and marinade to pan and stir/toss regularly until tomatoes have started to blister and marinade has reduced and become sticky.
  7. Place rocket onto plates with parmesan mash. Top with beef slices, balsamic tomatoes, a little shaved parmesan and a few oregano leaves.
