15-Minute Beef Sirloin Steaks with Creamy Mushrooms & Roast Potatoes

In just 15 minutes you'll have a fabulous steak dinner on your table, inspired by classic bistro fare. After cooking the steaks, you'll fry the mushrooms in the same pan to soak up all of the delicious flavours, and then add sour cream to make a rich sauce. Served with pre roasted potatoes, this meal is all about convenience without sacrificing any flavour!


Ingredients

Beef

  • 1 drizzle of oil
  • 1 tsp fennel & lemon salt
  • 600g beef sirloin steaks

Mushrooms

  • 200g sour cream
  • 100g baby spinach
  • 1 drizzle of oil
  • 400g portobello mushrooms, roughly chopped

Potatoes

  • 600g roasted potatoes

Steps

  1. Heat oil in a large fry-pan on medium-high heat. Pat beef dry and season with fennel and lemon salt measure and pepper. Cook for 3-4 minutes each side, for medium-rare (depending on thickness), or until cooked to your liking. Rest covered before thinly slicing. Reserve pan.
  2. Chop mushrooms. Heat oil in a second large fry-pan on high heat. Add mushrooms and a pinch of salt and cover with a lid. Cook for about 5 minutes, stirring once during cooking, until tender.
  3. When mushrooms are tender, add spinach and stir to wilt. Remove from heat, stir through sour cream and season to taste with salt and pepper.
  4. Cook potatoes in reserved pan on high heat. Add a little more oil if needed. Cook for 5-6 minutes, until hot through. Alternatively, remove seal from potatoes and heat in microwave for about 5 minutes, until hot through.
  5. Potatoes and beef topped with mushrooms.
