Cauliflower Mac ‘N’ Cheese

A veggie filled mac 'n' cheese!
Ingredients
CAULIFLOWER MAC AND CHEESE
- 400g macaroni pasta
- 1/2 cauliflower, roughly chopped into small pieces
- 1 brown onion
- 2 cloves garlic
- 100g semi-dried tomatoes, chopped
- 1 1/2 cups milk
- 1/2 cup cream
- 1/2 teaspoon salt
- 2 cups grated tasty cheese (reserve 1/2 cup for topping)
- 2 teaspoons cornflour mixed with 2 tablespoons water
- 1/2 cup fine wholemeal breadcrumbs
SPINACH AND TOMATO SALAD
- 2 tomatoes
- 2 tablespoons mint leaves
- 1/2 bag baby spinach leaves
DRESSING
- 1 1/2 teaspoons balsamic vinegar
- 1 1/2 teaspoons oil
- 1/2 teaspoon mustard (e.g. Dijon, wholegrain)
- 1/4 teaspoon runny honey

oven to grill. Bring a large pot of salted water to the boil.

Cook pasta in pot of boiling water for 5 minutes. Add cauliflower and cook for a further 3 minutes, or until cauliflower is tender. Drain well and return pasta and cauliflower to pot on low heat to steam for 30 seconds (to dry macaroni). Drizzle with oil and cover to keep warm.

Finely dice onion and mince garlic. Heat a drizzle of oil in a fry-pan on high heat. Cook onion, garlic and semi-dried tomatoes for 3 minutes, or until onion is soft. Add milk, cream, salt, cheese and cornflour/ water mix to onions and cook on medium heat for 1–2 minutes, or until sauce thickens.

Add sauce to pot with pasta and cauliflower and return to a medium heat for 1–2 minutes, or until heated through. Mix well and season to taste with salt and pepper.

Spoon cauliflower mac and cheese into a large baking dish or individual ramekins. Sprinkle over breadcrumbs then reserved cheese. Grill for 2–3 minutes, or until top is golden and crunchy

While cauliflower mac and cheese is grilling, prepare salad. Dice tomatoes 2cm; roughly chop mint; place in a bowl with spinach. In another small bowl, mix all dressing ingredients together then toss through salad just before serving.

Divide cauliflower mac and cheese between plates and serve spinach and tomato salad on the side.
