Smoky BBQ Beef Steaks with Wedges and Garlicky Broccoli

Ingredients

Beef Steaks & Pan Gravy

  • 1 drizzle of oil
  • 1 Tbsp butter
  • 1 Tbsp plain flour
  • 1 cup beef stock
  • 1 pack Montreal Spices
  • 300g beef rump steaks

Broccoli

  • 1 Tbsp butter
  • 1 garlic clove, minced
  • 1 broccoli, cut into florets & stalk diced
  • 150g frozen peas

Wedges

  • 400g potatoes, cut into wedges
  • 1 drizzle of oil

Steps

  1. Preheat oven to 220°C (or 200°C fan bake). Bring a medium pot of salted water to the boil.
  2. Cut potatoes into wedges and toss on a lined oven tray with oil. Season with salt and pepper and roast for about 25-30 minutes, until golden and tender.
  3. Cut broccoli into florets and cook with peas in pot of boiling water for 5-6 minutes, until soft. Mince garlic. Drain broccoli and peas, return to pot and mash with garlic and butter, until crushed. Season to taste with salt and pepper. Cover and keep warm to serve.
  4. Pat beef dry, season with salt and rub with Montreal spices. Heat oil in a medium fry-pan on medium-high heat and cook beef for 3-4 minutes, each side, for medium (depending on thickness), or until cooked to your liking. Reserve pan and set steaks aside, covered, to rest for a few minutes before slicing thickly.
  5. Return reserved pan to medium heat with butter and cook for about 30 seconds, until melted. Add flour and cook a further 1 minute. Add beef stock and any steak resting juices, whisking for about 1-2 minutes, until thickened. Season to taste with salt and pepper.
  6. Beef steaks with wedges, broccoli and gravy.
