Lentil and Kumara Hot Pot with Snow Peas, Green Beans and Almonds

This Lentil and Kumara Hot Pot is perfect for those chilly winter nights!


Ingredients

LENTIL AND KUMARA HOT POT

  • 400g red kumara, peeled and diced 3cm
  • 1 tablespoon butter
  • 4–5 tablespoons milk
  • 1 brown onion
  • 1 courgette
  • 2 teaspoons thyme leaves
  • 1 can brown lentils
  • 1 can chopped tomatoes
  • 2 teaspoons soy sauce
  • 1/2 cup grated Colby cheese

SNOW PEAS, GREEN BEANS AND ALMONDS

  • 100g snow peas, ends trimmed
  • 100g green beans, ends trimmed
  • 35g sliced almonds, toasted

Steps

  1. oven to grill. Bring a large pot of salted water to the boil. Bring a full kettle to the boil.
  2. Cook kumara in pot of boiling water for about 15 minutes or until tender. Drain and return to pot with butter and milk, mash until smooth. Season with salt and pepper.
  3. While kumara cooks, prepare rest of the hot pot. Finely dice onion; dice courgette 0.5cm; chop thyme; drain and rinse lentils.
  4. Heat a drizzle of oil in a medium fry-pan on medium heat. Cook onion, courgette and thyme for about 5 minutes or until onion is soft. Add tomatoes, lentils and soy sauce to pan, bring to the boil, reduce heat to low and simmer for about 5 minutes or until sauce thickens slightly. Season.
  5. Even out lentil mix in pan. Top with dollops of kumara mash and smooth out to evenly cover lentil mix. Sprinkle over cheese and grill for about 5 minutes or until cheese has melted and is golden brown. Checking regularly to avoid burning.
  6. Bring a medium pot of salted water to the boil on high heat. Add snow peas and green beans and cook until bright green and tender, 2–3 minutes. Drain and drizzle with olive oil. Top with almonds.
  7. divide lentil and kumara hot pot between plates and serve vegetables and almonds on the side.
