Lemon Fish Bake with Kumara Carrot Crush

Ingredients

KUMARA CARROT CRUSH

  • 600g red kumara, peeled and diced 3–4cm
  • 2 carrots, sliced in half lengthways and sliced 2cm
  • 1 tablespoon butter
  • 2 tablespoons milk

LEMON FISH BAKE

  • 2 tablespoons butter
  • 1 leek, white and pale green part only, sliced lengthways and finely diced
  • 1 1/2 tablespoons flour
  • 1 1/4 cups milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon lemon zest
  • 1/2 cup grated Colby cheese
  • 1/2 bag baby spinach leaves
  • 450g fish fillets
  • 1/4 cup panko breadcrumbs

TO SERVE

  • 1 lemon, cut into wedges (optional, adults)

Steps

  1. oven to 200°C. Bring a large pot of salted water to the boil. Grease a medium-large oven-proof dish (approx. 26cm long) with butter or oil.
  2. Cook kumara and carrots in pot of boiling water for 15–17 minutes, until very soft. Drain and return to pot with first measure of butter and milk. Season with salt and pepper and gently crush. Cover and keep warm.
  3. Melt second measure of butter in a medium pot on low-medium heat. Add leek, stir, cover and cook for 5–7 minutes, or until soft. Add flour and stir for about 1 minute.
  4. Add second measure of milk to pot with leek, a little at a time and stir continuously until smooth. Simmer gently, stirring occasionally, until sauce thickens, 2–3 minutes.
  5. Remove pot (with leek) from heat and add salt, pepper, lemon zest, cheese and spinach. Mix sauce well to combine.
  6. Pat fish dry, remove any remaining scales or bones, and cut any larger fillets in half. Arrange fish in a single layer in prepared oven dish and cover with sauce. Sprinkle over breadcrumbs then bake for 12–15 minutes, or until fish is just cooked through and breadcrumbs are golden.
  7. spoon kumara carrot crush onto each plate and top with lemon fish bake. Garnish with a lemon wedge on the side (if desired).
