Spiced Lamb Pilaf with Almonds, Golden Raisins and Carrot Salad

Pilaf is a dish in which rice is cooked in a seasoned broth, yum!


Ingredients

PILAF

  • 1 tablespoon olive oil
  • 1 brown onion, finely diced
  • 1 clove garlic, minced or finely chopped
  • 2 teaspoons butter
  • 1 1/2 cups basmati rice
  • 2 teaspoons GF lamb pilaf seasoning
  • 2 cups GF chicken stock
  • 1/4 cup water
  • 1/2 teaspoon salt

DRESSING

  • Zest and juice of 1 lemon
  • 1 tablespoon olive oil
  • 1/2 teaspoon runny honey

CARROT SALAD

  • 2 carrots
  • 1 courgette
  • 1 baby cos lettuce
  • 50g GF sliced almonds and golden raisins

SPICED LAMB

  • 450g lamb mince
  • 1 teaspoon GF lamb pilaf seasoning

TO SERVE

  • 3/4 cup natural yoghurt
  • 1/2 teaspoon runny honey (optional)
  • 3 tablespoons chopped mint leaves

Steps

  1. Heat oil in a pot on medium heat. Cook onion and garlic for 2–3 minutes. Add butter, rice and first measure of lamb seasoning and cook for 1–2 minutes. Stir in stock, water and salt. Cover, reduce to low heat to cook for 15 minutes. Turn off heat and leave to steam, covered, for 10 minutes. Do not lift lid during cooking.
  2. Prepare salad. In a bowl, combine all dressing ingredients and mix well. Grate carrots; grate courgette; shred lettuce; place all in bowl with dressing, almonds and raisins. Season with salt and pepper and toss to combine.
  3. Heat a drizzle of oil in a fry-pan on medium-high heat and cook lamb and seasoning for 4–5 minutes, breaking up with a wooden spoon, until browned.
  4. Toss through cooked rice, then season to taste with salt and pepper.
  5. In a bowl, combine yoghurt with honey (if using) and half the mint (reserve remainder for garnish).
  6. spoon spiced lamb pilaf onto plates. Serve carrot salad on the side and drizzle over a little minted yoghurt. Garnish with remaining mint leaves.
