15-Minute Mexican Style Chicken Bowl with Avocado & Black Bean Salsa

Classic Mexican flavors marry in this satisfying bowl that's bursting with freshness, protein and color.


Ingredients

Chicken

  • 1/2 tsp oil
  • 275g diced free range chicken breast
  • 1/2 pack Mexican blend
  • 15g tomato paste
  • 1/4 cup XX frozen corn XX

Salsa

  • 1/2 avocado, diced 1cm
  • 1/2 XX capsicum XX, diced 1cm
  • 1/2 can black beans, drained & rinsed
  • 1 garlic chilli blend, optional

To Serve

  • 1 baby cos lettuce, shredded

Dressing

  • 2 Tbsp Mexican dressing
  • 50g yoghurt

Steps

  1. In a small bowl, combine Mexican dressing and yoghurt. Set aside for serving.
  2. Heat oil in a medium fry-pan on medium heat. Add chicken, Mexican blend and tomato paste and cook for about 3 minutes, to seal chicken. Add corn and cook for a further 3-4 minutes, tossing occasionally, until chicken is cooked through. Remove from heat and stir through 2 Tbsp of the yoghurt dressing. Season to taste with salt.
  3. Meanwhile, dice avocado and capsicum. Drain beans. Toss all salsa ingredients together in a medium bowl with remaining yoghurt dressing. Season to taste with salt.
  4. Shred lettuce.
  5. Lettuce with chicken and resting juices. Top with salsa.
