Indian Lamb Burgers with Roasted Cauliflower and Curry Sour Cream

Roasted cauliflower is a tasty healthy alternative to a side of fries with your burger!


Ingredients

ROASTED CAULIFLOWER

  • 1/2 head cauliflower, cut into medium florets

INDIAN LAMB PATTIES

  • 550g lamb mince
  • 1 1/2 tablespoons Indian spice mix
  • 3/4 teaspoon salt
  • 1/2 cup panko breadcrumbs
  • 1 egg
  • 1/2 bag baby spinach leaves, thinly sliced

CURRY SOUR CREAM

  • 1/2 cup sour cream
  • 1/2–1 teaspoon Indian spice mix (depending on preference)
  • 2 teaspoons sweet chilli sauce (optional, adults)
  • 1/2 tablespoon lemon juice

TO SERVE

  • 5 Kiwi burger baps
  • 1/4 cup tomato sauce
  • 2 carrots, peeled and grated
  • 1 baby cos lettuce, leaves separated

Steps

  1. oven to 220°C. Line two oven trays with baking paper
  2. Toss cauliflower with a drizzle of oil on first prepared tray. Season with salt and pepper. Roast for about 15 minutes, or until tender. Remove from tray and set aside, cover to keep warm (you will need this tray again for warming burger baps).
  3. In a large bowl, combine all Indian lamb patty ingredients, season with pepper and mix well using clean hands. Use a half cup measure to shape into patties, about 10cm wide and 1.5cm thick.
  4. Heat a drizzle of oil in a large fry-pan on medium heat. Fry patties, in batches, for about 2 minutes each side until browned. Set aside on second prepared tray and finish cooking in oven for about 5 minutes, until just cooked through.
  5. While patties are cooking, mix curry sour cream ingredients in a bowl and set aside.
  6. Cut burger baps in half horizontally then place on tray used for roasting cauliflower, cutside-up. Warm in oven for about 4 minutes, or until lightly toasted.
  7. Spread tomato sauce on bottom half of each burger bap and top with an Indian lamb patty. Top with some carrot, lettuce, a dollop of curry sour cream and finish with the other half of the burger bap. Serve cauliflower and extra curry sour cream on the side.
