Falafel Pita Pockets with Hummus & Yoghurt

Bite into these savoury pockets of flavour! Enjoy our veggie-tastic take on a Middle-Eastern classic - a wholesome meal to share with the fam on the dinner table!


Ingredients

Fillings

  • 100g yoghurt
  • 200g hummus
  • 1/2 red onion, thinly sliced
  • 2 tomato, sliced
  • 1 lettuce, shredded

Pitas

  • 1 pack pita breads

Falafel

  • 1 drizzle of oil
  • 1 pack basil & lime falafel mix
  • 2 carrot, grated

Steps

  1. Preheat oven to high grill.
  2. Grate carrot and combine in a medium bowl with falafel mix. Use a tablespoon measure and damp hands to shape mixture into balls, flatten into 1cm-thick patties and set aside on a clean plate.
  3. Heat oil in a large fry-pan on medium-high heat and cook falafel for about 3 minutes each side, until golden. Season with salt.
  4. Place pitas on 1-2 oven trays and toast in oven for 2-3 minutes each side, until golden (see tip).
  5. Shred lettuce, slice tomato and onion.
  6. Pita filled with falafel, lettuce, tomato, onion, hummus and yoghurt.
