Chicken Caprese with Mozzarella & Balsamic Glaze

Nothing says summer like a caprese salad! Here we've done a chicken version for an extra protein kick! Made with fresh New Zealand mozzarella and drizzled with balsamic glaze this one is sure to satisfy!


Ingredients

Caprese

  • 1/2 tsp olive oil
  • 1 pinch of chilli flakes, optional
  • 1/4 red onion, finely diced
  • 1/2 pack mozzarella balls, cut in half lengthways
  • 1 tomato, diced 1cm

Greens

  • 1/2 tsp balsamic vinegar
  • 1/2 asparagus, ends trimmed
  • 1/2 tsp oil
  • 1/4 courgette, thinly sliced
  • 1/2 broccoli, cut into small florets

To Serve

  • 1/2 Tbsp balsamic glaze
  • 1/2 bunch basil, leaves separated

Chicken

  • 1/2 tsp oil
  • 1/4 pack Italian herbs
  • 140g free range chicken breast

Steps

  1. Preheat BBQ grill to medium-high (if using).
  2. Pat chicken dry, season with salt and coat in Italian herbs.
  3. Dice tomatoes and onion and halve mozzarella. Toss together in a medium bowl with chilli flakes, olive oil and a pinch of salt. Set aside.
  4. Heat oil in a medium fry-pan on medium-high heat. Cook chicken for 3-5 minutes each side (depending on thickness), until cooked through. Rest, covered, before slicing thinly. Reserve pan. Alternatively, cook chicken on BBQ.
  5. Cut broccoli into florets, thinly slice courgette and trim asparagus.
  6. Heat oil in reserved pan on high heat. Cook broccoli, asparagus and courgette with a splash of water and a pinch of salt for about 5 minutes, until tender. Add vinegar and toss to combine. Season to taste with salt and pepper.
  7. Prep basil.
  8. Greens topped with chicken, caprese, balsamic glaze and basil.
