Pulled Beef and Bean Wraps with Brussels Sprouts and Apple Slaw

Chipotle sour cream in a pulled beef taco, is your mouth watering yet?
Ingredients
BRUSSELS SPROUT AND APPLE SLAW
- 1 1/2 teaspoons vinegar (e.g. red wine, white wine)
- 1 tablespoon mayonnaise
- 150g Brussels sprouts
- 1 apple
- 1 carrot
PULLED BEEF AND BEANS
- 1/2 brown onion, diced
- 1 clove garlic, minced
- 1 teaspoon Mexican spice mix
- 250g pulled beef
- 1/2 can black beans, rinsed and drained
- 1 tablespoon water
- 1 tablespoon tomato sauce
- Pinch of chilli flakes (optional)
CHIPOTLE SOUR CREAM
- 1/2 pottle sour cream
- 1 1/2 teaspoons chipotle sauce
TO SERVE
- 4–6 wholemeal tortilla wraps
- 75g feta cheese, crumbled
- 1 1/2 tablespoons roughly chopped parsley leaves and stalks

oven to 200°C (if using to warm tortillas).

In a medium bowl, mix vinegar and mayonnaise until smooth.

Trim ends off Brussels sprouts, sit on flat side then very thinly slice; grate or very thinly slice apple then cut into matchsticks; peel and grate carrot. Toss all in a bowl until combined and season to taste with salt and pepper.

Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook onion and garlic for about 4 minutes or until soft and starting to brown. Add Mexican spice mix and cook for a further 30 seconds or until fragrant.

Add pulled beef, black beans, water, tomato sauce and chilli flakes (if using) to pan and simmer for 2–3 minutes, until heated through and sauce has thickened slightly. Season to taste with salt and pepper.

Wrap tortillas in foil and place in oven to warm for about 5 minutes. Alternatively, place on a plate, cover in cling film and microwave for about 1 minute, or until warmed through. In a small bowl, mix sour cream and chipotle sauce until combined.

Place all components on the table for everyone to assemble their own wraps. Assemble wraps by placing pulled beef and beans in middle of wrap and topping with slaw, crumbled feta, a dollop of chipotle sour cream and garnish with parsley.
